登起波 (Tokiwa) in Yonezawa
Bamboo set (3,900 yen): lean meat🍴The meat had a soft and tender texture.
Its flavor remained in my mouth…
You can fully enjoy its umami and fat.
In spite of lean meat, it was intensely marbled with fat.
You can eat it as Shabushabu, submerging a slice of beef in a deep, donut-shaped pot surrounding the chimney.
You just need to swish a slice of beef lightly through the broth.
Then you dip it into sweet and sour ponzu (citrus-based) sauce.
I visited Tokiwa, a long-established restaurant opened in 1894 and famous for Yonezawa beef dishes.
Pine tree set (6,000yen): chuck roll
The meat had a soft texture and its fat was rich in sweetness.
The sweetness spread through my mouth. Awesome!
I had my first slice with ponzu sauce.
And I had my second slice with sour, rich, and thick sesame sauce.
Sushi with Yonezawa beef on topThe meat was tender and its fat fell apart quickly in my mouth.
Udon (wheat flour noodles)The thin noodles had a smooth and elastic texture.
I could devour them even after I was full.
Kimuchi (spicy pickled vegetables) platterKimuchi had a rich flavor and plenty of umami.
Chinese cabbage had subtle spiciness and perfect sweetness.
Radish had a crunchy texture and was relatively spicy.
Nira (Chinese chive) was medium spicy. The strong chive flavor spread through my mouth as I bit it. I felt like boosting my stamina!
Tukudani with beef and burdock (ingredients simmered in soy sauce and mirin)The beef and burdock absorbed well with sweet, rich soy sauce.
The dish went well with drinks.
The female staff in a type of gown-like apron was cheerful and courteous to customers with smile.
I was very satisfied with delicious dishes here.
