Soba (noodles) with a soy-marinated soft-boiled egg in mackerel broth (880 yen)…
I enjoyed a thick texture of the broth that was rich in dried sardines and mackerel flavors.
The subtle bitterness and rich flavor of the broth made me feel good!
In addition, the broth went perfectly well with the flavor of fluffy, shredded nori (dry seaweed) and the crunchy texture and subtle spiciness of finely-chopped onion.
Yummy!
Firm and elastic texture of noodles
When noodles are well-mixed with this thick broth, you can’t help stop eating!
Char Siu pork
Thinly-sliced Char Siu pork was tender as if I ate a slice of roast beef.
The pork contained gentle umami flavor!
Meat rice (200 yen) as a finishing dish
Diced pork had a soft and elastic texture so I fully enjoyed its umami.
Eating it with wasabi (Japanese horseradish) enhanced the pork umami.
The pork also went well with soy-marinated fresh onions!
When you eat half of the rice with the noodle broth, you can’t stop eating it, because it especially enhanced the flavor of dried sardines.
I don’t know why.
