Its special sauce was simmered with beef gristle and bone, chicken born, onion, carrot, celery, and tomato for 14 days.
It was excellent!

The aged Hayashi rice had a gentle sweetness and sourness and was a high density of umami and savory flavor…
Onion cutting 2cm cubes had a crunchy texture. Very good!
This sauce was simmered for 21 days. Unbelievable!

I devoured 12 kinds of vegetables: snow turnip, red turnip, long black radish, yellow carrot, radish, golden beet, cucumber, purple carrot, red cabbage, mizuna (potherb mustard), onion, and tomato!
All vegetables were fresh and rich in flavor and umami. Amazing salad!
