The pork fillet cutlet had a tender but nice firm texture…
It contained less fat and the umami of pork gradually spread through my mouth.
Crab sticks were placed in the center of the pork and surprisingly, the flavor of crab sticks went perfectly well with the umami of pork.
I order a pork fillet cutlet set (1,670 yen) for lunch at Iwamatsu today.
Clear soup with Koya-tofu (freeze-dried tofu), bamboo shoot, and eryngii mushroom
I enjoyed gentle umami of the clear broth.
I really liked crunchy texture of eryngi mushroom and springy texture of thinly-sliced konnyaku (jelly-like food made from konnyaku potato).
Simmered bonito and kelp in sweetened soy sauce
Sweeten bonito and kelp had firm umami.
I could devour rice with it.
The pungent aroma of Aona leaves, sweetness of daikon radish, coarse texture of carrot made me feel good! I could devour rice with them too.
The miso soup was less salty and had a rich flavor of miso.
This is absolutely a healthy soup.
The restaurant’s exterior
The restaurant’s entrance looked very nostalgic.
It offers only L-shaped counter-seating.
Older owner chef, older female staff, and young male staff cooked and served customers.
The chef looked fierce at first glance.
“What were in this sweetened soy sauce dish?”
I took courage in asking him.
“Kelp and bonito. I made this dish.”
He replied to me with a full smile.
Iwamatsu is a recommended restaurant where you can have not only pork cutlet but also other delicious dishes.
